Roasted Red Pepper Stuffed Chicken

This recipe was pure luck.  I was cooking for a crowd, a crowd that doesn't eat pasta or potatoes.  A crowd that eats salads everyday for lunch, so you don't necessarily want one for dinner.  And lastly a crowd that can eat for a living.  So I needed something filling, fresh, and that would impress.  So I dreamed up this beauty.  I love feta cheese.  I love roasted red peppers.  I love spinach.  I love fresh basil.  So why not put it all together?  That was exactly my question.  So I did it.  I added chicken into the plan, and perhaps a side dish or two.  It was fabulous, and now is a staple in the dinner plans!
