Roasted Red Pepper Stuffed Chicken

This recipe was pure luck.  I was cooking for a crowd, a crowd that doesn't eat pasta or potatoes.  A crowd that eats salads everyday for lunch, so you don't necessarily want one for dinner.  And lastly a crowd that can eat for a living.  So I needed something filling, fresh, and that would impress.  So I dreamed up this beauty.  I love feta cheese.  I love roasted red peppers.  I love spinach.  I love fresh basil.  So why not put it all together?  That was exactly my question.  So I did it.  I added chicken into the plan, and perhaps a side dish or two.  It was fabulous, and now is a staple in the dinner plans! It may look intimidating but I promise it isn't.  

Here's what ya need:

Chicken breast, spinach, roasted red peppers, basil, salt, pepper, garlic powder, olive oil, and toothpicks.

Step one: Cut your chicken breast into two pieces length wise so that you have to thin pieces.  Also cut up your roasted red peppers into strips.

Step two: Salt, pepper, and garlic powder your chicken on one side. Also you can add feta at this step, it really gives it a extra layer of flavor. I didn't use it in these pictures because I forgot to get it at the store, and because my mom hates feta. So I left it out which is always an option, but I would suggest using it!

Step three: Use a small handful of spinach, about 4 strips of peppers, and 1 fresh leaf of basil. Since it's winter and my garden is hibernating I used basil from my garden that I dried at the end of the season. Which is perfectly fine. But whenever fresh basil is available you should use it!

Step four: Place the spinach, basil, and red peppers at the fatter end of the chicken, then roll tightly and stick a toothpick in it to keep it together.

Step Five: Put your olive oil in a pan and heat it up. Then brown your rolls on each side, place into baking dish and finish it off in the oven at 350 degrees for 10-15 min.

The recipe:

2 tbs olive oil

4 Chicken breasts

2 tsp garlic powder

1 tsp salt

1 tsp pepper

8 basil leaves ( 2 tsp dried basil)

2 whole roasted red peppers

1 bag spinach

1/3 cup feta cheese (optional)

The extras:

* Don't forget to warn your guests to take out the toothpicks before eating, or you can remove them after you take take them out of the oven. 

* This will feed 4 individuals, 2 rolls per person on average, with additional side dishes.
