Sloppy Joe's

If you know anything about my husband you know college football Saturday's are almost as big as Christmas.  He looks forward to them all year long, and every week we are watching all the games. Group texts are going off, flipping between games is a must, and don't even think about watching anything else all day long. With that said, what do I do all day? Nap, cook, eat and repeat!  Yupp, he may look forward to the actual games, I look forward to the football food. Win! Win!

Ginger Soy Noodles

There’s a small restaurant near my hometown that has the best pasta salad.  I go there, get a salad and a large order of the noodles.  And I can bet I am not the only one to go there pretty much for the side dish. Actually I know I’m not, my brother’s girlfriend Sherie does the same thing, we have discussed our love for it many times.  For two years now, maybe longer, I have tried to re create it.  Finally, I can say I think I got close.  Not saying exact, but close enough to get a fix.  Similar ingredients to sesame noodles, but not quite.  Slightly like the noodles you would get form a Hitachi restaurant, minus the butter.  You just have to try them, I eat them at all temperatures.  Feel free to add or subtract any veggies I have in it. Make it your own, just dear god make it.  Eat it for dinner, then breakfast and if your lucky lunch.

Pork tenderloin with mustard sauce

The first time I made this, everyone said it was good.  Then the next four days my Father told me everyday how wonderful it really was.  Now there's a few things odd about that last sentence.  A. My Father said something new was good, not once but for four whole days.  B. I made enough to actually be eating leftovers for four days.  C. It wasn't red meat and potatoes, and my Dad actually wanted me to make it again, which is still blowing my mind.  I give him a bad rap sometimes, he usually likes my cooking but he's a creature of habit and likes minimal seasonings, and sauces.  He could eat pasta everyday and never get sick of it, and he LOVES meat and potatoes.

Meatballs and Quick Sauce

Growing up we never ate meatballs without pasta.  But the older I get the more I realize how much I enjoy them really any time, any way.  I was in Florida recently at a food truck rally (Side note I love food trucks! I try to find them everywhere I go! Plus my brother really wants to own one, and the idea is slowly growing on me. Anywho....) and ate meat balls with buffalo sauce, asian glaze, and the typical grandma's meatballs. These here are the plain jane of meatballs, a simple quick red sauce, and I'm actually making them as a appetizer for a party.  But with that said, they are pretty delish.  You could always double the sauce and make some pasta, quinoa pasta or whatever tickles your fancy.
